Vegetarian Cabbage Rolls

Vegetarian cabbage rolls are an alternative to cabbage rolls with a meaty filling. They contain groats and mushrooms. This dish will allow you to gain respect from your vegetarians friends. Ready cabbage rolls can be served with mushroom or tomato sauce. It all depends on your culinary vision.

Ingredients:

  • 1 Savoy cabbage
  • 1 onion
  • 0.5 pound mushrooms
  • ½ glass pearl barley
  • 4 tablespoons olive oil
  • a pinch of salt
  • a pinch of pepper

Preparation:

  • Savoy cabbage should be divided into leaves. Boil salted water in a large pot and then put there the cabbage leaves for a minute.
  • Chop the onion and fry it in olive oil. Add cut mushrooms. Then fry them and season with salt and pepper.
  • Boil the pearl barley in salted water until it’s tender and soft.
  • Mix onions, groats and mushrooms in a separate bowl.
  • Spread the cabbage leaf, slightly cutting off the hard part from the root. Put a portion of stuffing on the leaf and wrap it tightly. Put the cabbage rolls evenly in a baking mold and put it in the oven for about 20 minutes at 170 degrees.
