  • 4 eggplants
  • Parsley
  • A clove of chopped garlic
  • salt
  • Pepper
  • 4 tablespoons of olive oil
  • Rosemary


  • Cut the eggplants lengthwise and bake in a grill pan for about 5 minutes on each side until slightly brown.
  • Then add chopped garlic, olive oil, parsley and a pinch of rosemary. Stir and bake for another 2-3 minutes.
