Shrimp veggie salad is a rich source of protein. The meat of these sea creatures is very tender and will perfectly enhance the taste of vegetables. Lemongrass in combination with olive oil and lemon juice will add an oriental flavor to the dish. This salad is light, tasty and very easy to prepare.

  • 10 large shrimp
  • 4 tablespoons olive oil
  • 1 tablespoon lemongrass, drained
  • 1 iceberg lettuce
  • 12 black olives
  • a handful of sun-dried tomatoes
  • pepper
  • salt
  • ½ tablespoon lemon juice


  • Add half a tablespoon of dried lemongrass to the lightly salted, boiling water and throw in the shrimp which should be thawed. Cook on a low heat for about 15 minutes and stir frequently.
  • Cut lettuce into small strips and then put them in a large bowl. Cut olives in half, add a handful of sun-dried tomatoes.
  • Pour olive oil and the rest of dried lemongrass into a glass. Add pepper and half a tablespoon of lemon juice. Mix thoroughly.
  • Add drained shrimp to lettuce and then mix. Pour olive oil sauce on the dish. Mix again. Shrimp salad is ready.
