    Ingredients for risotto with mushrooms:

  • 1/3 cup cheese
  • 6 cups chicken broth
  • 4 tablespoons butter
  • 1 pound mushrooms
  • 1 pound white mushrooms
  • 2 onions
  • 1 clove garlic
  • 3 tablespoons chives
  • 1 ½ cups rice
  • pinch salt
  • pinch pepper
  • 3 tablespoons olive oil
  • ½ cup dry white wine

    Preparation of risotto with mushrooms

  • Heat the broth in a pot over low heat and simmer it for a while.
  • Pour olive oil over the pan and let it warm on medium-high heat. Slice mushrooms thinly and place them in a pan. Fry them for few minutes until soft. Put mushrooms and their juice in a bowl.
  • Dice onions, chop garlic and fry that in a pan as well, cook few minutes.
  • Add rice, stirring to coat with oil and cook few minutes again until the rice has golden color. During stirring add some wine and cook until it’s fully absorbed.
  • Do the same thing with ½ broth, add it to the rice and let the rice absorb the broth. Repeat this step stirring and adding ½ cup at a time until the broth is absorbed, for about 15-20 minutes. After this time rice should be al dente and ready to be put on a plate.
  • Pour the mushrooms and their juice over prepared rice and stir with parmesan, butter and chives. Season with pepper and salt and the dish is ready to serve.
