To cook spaghetti pasta, pour water into a pot and place on medium-high heat. Make water to boil and season with salt, then add spaghetti and cook until al dente.
Chop parsley, guanciale/bacon and mince garlic. Put bacon into a pan and fry on medium high-heat until crispy. Drain bacon on paper towels, set aside and save some bacon fat for later.
Chop onion and use same pan to cook it on medium-high heat until golden color. During cooking, add garlic.
Beat eggs. Add spaghetti pasta into the same pan and, add cooked guanciale /bacon and stir all ingredients together. Add Beaten eggs, cook everything on low-high heat and toss until creamy. You can add some water if necessary. Add Parmesan cheese and toss again few times.
Season with little salt and pepper, put on a plate and sprinkle with fresh parsley on the top. Spaghetti Carbonara is ready to eat.
