Easy Spaghetti Carbonara

    Ingredients for spaghetti carbonara:

  • ½ cup grated Parmesan cheese
  • ¼ cup grated Parmesan cheese
  • 1 pound (450g) spaghetti
  • 9 oz (255g) guanciale/bacon
  • 2 ½ tablespoons fresh parsley
  • 1 clove garlic
  • salt and pepper to taste
  • 1 small onion
  • 4 eggs

    Preparation of spaghetti carbonara

  • To cook spaghetti pasta, pour water into a pot and place on medium-high heat. Make water to boil and season with salt, then add spaghetti and cook until al dente.
  • Chop parsley, guanciale/bacon and mince garlic. Put bacon into a pan and fry on medium high-heat until crispy. Drain bacon on paper towels, set aside and save some bacon fat for later.
  • Chop onion and use same pan to cook it on medium-high heat until golden color. During cooking, add garlic.
  • Beat eggs. Add spaghetti pasta into the same pan and, add cooked guanciale /bacon and stir all ingredients together. Add Beaten eggs, cook everything on low-high heat and toss until creamy. You can add some water if necessary. Add Parmesan cheese and toss again few times.
  • Season with little salt and pepper, put on a plate and sprinkle with fresh parsley on the top. Spaghetti Carbonara is ready to eat.
