  • 8 starchy potatoes, e.g. Lord, Finesse
  • 1 tablespoon of sugar
  • a pinch of sea salt
  • vegetable oil


  • Boil a liter of water with sugar in a saucepan.
  • Put the chopped potatoes into boiling water and cook for about 4 minutes. Dry them on a paper towel.
  • Heat the vegetable oil in a deep pot and put in a portion of fries. The oil should completely cover the potatoes. Fry them for a few minutes. Drain the fries and cool the oil.
  • Heat the oil again and fry the same fries until they are slightly browned.
