Lemon semolina pudding
Semolina is a delicate ingredient and its texture is like cloud’s. We can easily conjure up a delicate lemon semolina pudding. It’s perfect for dessert or nutritious breakfast. You can decorate it with fresh fruit, granola or add nuts.
Cook time: 10 min
70 g semolina
1,5 cups of milk
80 g white sugar
1 teaspoon of cocoa
a pinch of salt
2 tablespoons lemon juice
lemon rind, grated
Mix semolina with some cold milk. Boil the rest of the milk, add semolina and gently salt. Add some sugar and boil.
Put the semolina into a bowl and add grated lemon rind as well as the remaining sugar and lemon juice. Add some cocoa for color.
Whisk all the ingredients until it’s smooth. Our lemon semolina mousse is ready.
