Semolina is a delicate ingredient and its texture is like cloud’s. We can easily conjure up a delicate lemon semolina pudding. It’s perfect for dessert or nutritious breakfast. You can decorate it with fresh fruit, granola or add nuts.

  • 70 g semolina
  • 1,5 cups of milk
  • 80 g white sugar
  • 1 teaspoon of cocoa
  • a pinch of salt
  • 2 tablespoons lemon juice
  • lemon rind, grated


  • Mix semolina with some cold milk. Boil the rest of the milk, add semolina and gently salt. Add some sugar and boil.
  • Put the semolina into a bowl and add grated lemon rind as well as the remaining sugar and lemon juice. Add some cocoa for color.
  • Whisk all the ingredients until it’s smooth. Our lemon semolina mousse is ready.
