Easy Forest Fruit Cake

This recipe will allow you to bring back pleasant memories during a family afternoon tea. The delicate taste of the sponge cake is enhanced by the sweet taste of forest fruit.

Ingredients:

  • Sponge cake:
  • 4 eggs
  • 1 glass sugar
  • 1 glass flour
  • 1½ teaspoons baking powder
  • lemon bakery emulsion
  • 1 teaspoon vinegar
  • Frosting:
  • ½ glass powdered sugar
  • 1 tablespoon lemon juice
  • 20 ml forest fruit juice
  • fruits for decoration

Preparation:

  • Egg whites should be separated from the yolks. Add vinegar and baking powder to the yolks and mix thoroughly. Egg whites must be beaten with sugar to form a stiff foam. Add yolks, vinegar and baking powder. Combine all ingredients.
  • Pour the dough onto a baking tray, lined with parchment paper. Bake the sponge cake for about 30 minutes at 180 degrees.
  • To create the icing, mix half a glass of powdered sugar with one tablespoon of lemon juice and add forest fruit juice to color the icing.
  • Decorate the sponge cake with the icing and fresh forest fruit before the frosting freezes. Our forest fruit cake is ready to be served.
